A bowl of tomato soup isn’t complete without that grilled cheese sandwich next to it. And these dippers make it even more fun for kids (and adults alike) to dip grilled cheese into a bowl of soup.

Ingredients to make grilled cheese dippers

This is one of those great basic recipes that only uses three ingredients, which is so comforting in a time when we are all trying to limit trips to the grocery store. Here’s what you’ll need:

  • Sliced bread: You can use any sliced bread you’d like. Make sure it’s pretty soft and pliable though. I tried this recipe with brioche bread and sprouted whole grain bread, and both didn’t hold up to the rolling. Pick something that won’t tear apart easily.
  • Butter: Use high quality butter to grease the pan for cooking the grilled cheese. It gives a beautiful golden crust and adds tremendous flavor to the grilled cheese dippers.
  • Cheese: This, anyone can argue, is the most important part of any grilled cheese recipe. You want to select a cheese that is flavorful, melty and all-natural to get the best results. My favorite is Havarti Roth Cheese (original or Dill) because they’re known for their high quality and amazing flavor! The milk used to make the cheese is all sourced from local family farms within 60 miles of their creameries. And their cheeses are all natural, rBST-free and so flavorful!

How to make grilled cheese dippers

Start by removing the crust from the slices of bread. This will make it easier to roll them, and you can use them to make some homemade croutons or bread pudding in the future.

Now you can use a rolling pin to flatten out the piece of bread. The flatter it is, the easier it will be to roll the cheese inside and keep them sealed when you cook them.

Finally, it’s time to add cheese slices and roll them up. You want to tightly grab the bread and roll slowly.

When you’re finished rolling the grilled cheese dippers, place them on a cutting board with the seam down so they don’t unravel. And then it’s time to cook them on a skillet.

You should be able to fit 6 grilled cheese dippers on a regular size pan at once. Start with the seam side down and continually flip them over all the edges. It’s a bit tedious, but it’s worth it when you get golden crispy edges all around. Keep the heat to medium low so you can slowly melt the cheese without burning the bread.

Then you’re ready to serve these grilled cheese dippers (rollups) with your favorite tomato soup. I make a 5-ingredient tomato soup that is such a breeze to make with pantry staples. It’s the perfect accompaniment to the grilled cheese recipe.

Tips for making grilled cheese dippers

  • Don’t use too much cheese. As you can see in the image on the skillet, some cheese will ooze out as you cook the grilled cheese dippers and that’s perfectly fine. But you want to stick to about one ounce of cheese per slice of bread to limit a cheesy mess on the pan.
  • Use medium-low or low heat to melt the cheese without burning the bread. This is the ideal way to cook any grilled cheese so that you get a nice golden crust right when the cheese starts to melt.
  • Roll them different ways. You can roll them the way I show pictured from the long side, or you can also roll them up from corner to corner which makes for a longer grilled cheese roll-up.
  • Make them quicker by making a regular grilled cheese sandwich and then slicing vertically. They are perfect for dipping that way and great for little kids to dip into soup with less work for you.

What’s the best bread to use?

Because we roll these grilled cheese dippers, you want to use a soft sliced bread that is readily available – no need for a special trip to your bakers! You can use your favorite bread, whole wheat, white, brown or seeded all work really well. You want to use a bread that is pliable so that it doesn’t split when you roll it.

What goes good with grilled cheese?

Grilled cheese is so perfect when dunked in a tomato soup, but it also makes for a great snack that’s ready in a hurry. I also like to serve a grilled cheese alongside a simple side salad for a bit of goodness. You can’t beat serving them with a little tomato ketchup for dipping either!

  • 2 tablespoons unsalted butter
  • 6 slices soft bread
  • 6 ounces Havarti Roth Cheese  regular or dill

Instructions

  • Remove the crust from the bread and save for another recipe.
  • Use a rolling pin to roll the bread into flattened squares. Place a few slices of Havarti cheese on each piece of bread.
  • Use both hands, tightly roll up the bread, keeping the cheese intact inside.
  • In a large nonstick skillet over medium heat, melt 2 tablespoons butter. Add the dippers to skillet, seam-side down. Cook, turning often with tongs, until the bread is golden all around and the cheese is melted, about 3 minutes.
  • Dip into your favorite tomato soup

Notes

Storage: I recommend enjoying the grilled cheese dippers as soon as you make them. However, if you do have leftovers, you can wrap them in aluminum foil to keep warm for a couple hours at room temperature. Or store them in the fridge in an airtight container for a couple days. To reheat, place them on a pan or in a toaster oven until the cheese melts.
