Quick and easy to make and delicious to eat, a tortilla pizza is a great low carb alternative to your usual Friday night treat. It takes as little as 5 minutes to prepare and 5 minutes to cook in the oven, and you can customize it endlessly with any of your favorite pizza toppings.

Ingredients
The beauty of tortilla pizzas is that you can easily mix up the toppings to suite your tastes, or use up what ever is in the fridge! At a minimum, you will need:
- Tortillas: Use 10 inch flour tortillas. You can use whole wheat or regular.
- Sauce: Use your favorite store bought pizza sauce to spread on the tortillas. You can also use marinara sauce if you prefer.
I’ve given four different options for toppings below for you to choose from, or have fun making your own creations!

Please note that the tortilla pizza video below is the older version of the recipe that only uses one tortilla slice. It’s still a great option to make the pizza with ultra crispy edges.
How to make tortilla pizzas
- Place a tortilla on a parchment lined cookie sheet.
- Spread over the sauce.
- Sprinkle on part of the cheese with oregano.
- Add another tortilla on top and spread on another layer of sauce.
- Sprinkle on the remaining cheese and your toppings.
- Bake until the edges are golden and the cheese is bubbling.

Cheese pizza: pizza sauce and shredded mozzarella
Margarita pizza: pizza sauce, whole milk mozzarella, and fresh basil
Vegetarian pizza: pizza sauce, mushrooms, green peppers, and olives
Pesto pizza: pesto, cherry tomatoes, parmesan cheese, and basil
Tips for making tortilla pizza
- Cook the tortilla pizzas directly on the oven rack for convenience. This makes them super crispy and reduces the need for any cooling racks or baking sheet. However, I still recommend the cooling rack and baking sheet combo for clean-up purposes to minimize cheese drippings into the oven.
- Use the toaster oven instead of your oven. You can place the tortilla on the rack of your toaster oven. You can use the same temperature of 425F, but the time will be 2-3 minutes shorter.
- Buy large flour tortillas for this recipe. You can use a gluten-free variety like cassava tortillas, whole wheat or a keto friendly tortilla, but large works best.
- Cut and slice the toppings into similar sized pieces. This will allow them to cook evenly. If you’re using pre-cooked items like caramelized onions or leftover chicken, you don’t have to worry about the sizes.
- Get an extra crispy tortilla crust by cooking the pizzas in a skillet. Heat a little oil in the skillet, once hot, wipe the excess oil out with kitchen paper and place in a tortilla. Add the toppings and then cook in the pre heated oven as directed.

The best part about making your own pizzas is that you get to choose whatever toppings you want! These are my go to’s but they are a great way to use up any veggies you have hiding in your fridge. You can also add meats like cooked shredded chicken or cooked ground beef or turkey.
Yes, you can omit the cheese or use a good melting vegan variety.
These pizzas are best enjoyed as soon as they are made, but if you have leftovers you can reheat them in an oven at 350f for 5 minutes.
Not only are these tortilla pizzas lower in carbs, but they are super quick to make too! So easy to make them up to suit everyone’s taste and even your picky eaters will love them!

Ingredients
- 2 10-inch flour tortillas
- ½ cup pizza sauce divided
- ½ cup shredded mozzarella cheese divided
- ½ teaspoon oregano divided
- ¼ cup sliced olives
- ¼ cup sliced mushrooms
- ¼ teaspoon red pepper flakes
Instructions
- Preheat the oven to 425°F. Place a baking sheet or pizza stone, if you have one, in the oven while it’s preheating.
- Place one tortilla on a piece of parchment paper. Spread ¼ cup of the pizza sauce evenly over the tortilla. Sprinkle ¼ cup of the mozzarella cheese over the pizza sauce. Season with ¼ teaspoon of the oregano.
- Place the second tortilla on top and repeat with the remaining pizza sauce, leaving a small border around the edge for the crust, then add the remaining cheese and the remaining oregano.
- Add the sliced olives, sliced mushrooms and red pepper flakes, or your desired pizza toppings, on top of the cheese.
- Carefully transfer the assembled tortilla pizza (with the parchment paper) onto the preheated pizza stone or baking sheet. Bake for about 5-7 minutes or until the tortilla edge is crisp, and the cheese is melted and bubbly. Use a pizza cutter to slice the pizza into 4 or 6 slices and enjoy immediately.
