I think it’s safe to say that anything that takes on pizza flavor takes on a fabulous flavor. Well, I’ve had pizza inspired sushi and that actually doesn’t fit my generalized observation. But, pizza quinoa bites – those definitely do! If you’re looking for a vegetarian protein-packed party appetizer, you should definitely try these. It’s a pizza-inspired snack that you can feel good about!
How do you make pizza quinoa bites
What’s even better about this pizza bites recipe is how simple it is to make. To start, you’ll beat three eggs and add cooked quinoa on top of the eggs. You can use leftover quinoa to make the recipe even faster. In fact, I make extra quinoa so that I can have leftovers to make this recipe.
Next, add some grated cheese and spices. To bring out the pizza flavor, I use an Italian-blend of shredded cheese or shredded mozzarella. For the spices, I use Italian seasoning, which is a mix of oregano, thyme, basil, rosemary, sage and marjoram. If you don’t have Italian seasoning, I would use oregano plus another one of the listed dried herbs if you have any on hand.
Finally, this is where the fun happens. You can add whatever pizza-related toppings you’d like. I kept it simple with just olives, but you can also do beef pepperoni, mushroom, green peppers, bell peppers or even pineapple if that floats your boat!
Depending on the size you make the patties, you can make between 12 to 18 pizza bites. I use a mini muffin tin and fill the mixture to the top so I end up with 12 pizza bites. If you’re making these for kid, fill the mini muffin tin ¾ of the way full so they are even smaller.
Whatever toppings you highlight, add some on top so it sends a signal about what’s inside these pizza quinoa bites. They bake very quickly in the oven. You’ll know they’re done when you see the cheese get bubbly and golden around the bites.
Serve with your favorite pizza sauce or ranch dressing or just eat them on their own! They have a crispy exterior, soft and cheesy interior and that delicious pizza flavor all over!
These pizza quinoa have quinoa as the main ingredient. That means they’re packed with plant-based protein that’s going to make your tummy feel happy. You can customize them with your favorite pizza toppings and take them with you to your next party! I’ve found that these make the best party appetizers because both adults and kids love them!
I especially love making them for kids because they are portable for on-the-go snacking, fit easily into a lunchbox and they give kids a healthy dose of protein for after-school snacking.

Pizza Quinoa Bites
Ingredients
- 1 cup cooked quinoa made from ⅓ cup uncooked quinoa.
- 3 eggs lightly beaten
- 1 cup shredded Italian-blend cheeses
- ¼ cup olives sliced
- ½ teaspoon Italian seasoning
- ¼ teaspoon salt
- 1/2 cup pizza sauce warmed for dipping
Instructions
- Preheat oven to 350° F. Lightly coat 12 mini muffin cups with nonstick cooking spray.
- In a large bowl, combine all ingredients. Divide quinoa mixture between prepared muffin cups.
- Bake for 20 to 25 minutes or until golden brown. Serve with pizza sauce.

These are delicious. I did add some onion and bell pepper. I also took a bit of the mixture and put it in muffin top tin. They were great and looked a little more like a pizza.

Is the recipe supposed to say 1/3 cup UNCOOKED quinoa??
This recipe uses 1 cup of cooked quinoa. It usually takes 1/3 cup of uncooked quinoa to get that 1 cup of cooked quinoa.
Do you have any suggestions to substitute for the eggs? I have a vegan family member who would love these. Her vegan cheese should work fine if baked at a higher temperature. I’m wondering about the mashed sweet potato that you substitute in your black bean burgers, but am afraid that it would change the flavor too much.
You can try to add shredded and maybe more cheese? I haven’t tried that though.
